Build the next opening from the last one

Perspective · Leadership and capital discipline

Each restaurant opening creates information that should improve the next capital decision. Capturing that information requires a review that connects development, operations, finance and the customer experience.

Review the full investment

Start with the original case and compare it with what happened. Include the cost and time to open, pre-opening work, working capital and the path to stable operations. Identify which differences came from a one-time event and which could recur across the pipeline.

The purpose is to improve the next decision. If a kitchen layout repeatedly constrains throughput, the learning belongs in the format standard. If recruitment begins too late, the development process needs a different trigger. If the sales mix differs from the plan, the financial case needs to reflect it.

Measure repeatability

A strong opening team can make an individual launch look easier than routine operations will be. Review performance after the launch team leaves. Consider whether an ordinary field structure can maintain standards and whether the manager has the tools, staffing and support required.

Look across several locations while retaining the differences between them. Average performance can conceal a format problem or a site-selection issue. A cohort view allows management to distinguish what is improving from what is being diluted by new openings.

Turn learning into a decision

Close the review with changes to the next investment, a responsible owner and a date for checking whether those changes worked. Give teams permission to identify weaknesses while the cost of addressing them is still manageable.

A disciplined expansion organization creates a feedback loop from restaurant performance to capital allocation. Over time, that loop can become one of its most valuable capabilities.
